valentine’s day menu

Luke and I did Valentine’s Day early this year, because he won’t be around on the actual day.

This may not be great for me, but it works out splendidly for you, because I put together a fool-proof menu that you can now copy. And wow the man in your life like I did.

What you see here is:

Scallops Provencal

Herbed Basmati Rice

Salad with a Lemon Vinaigrette

And wine. Because everything’s better with wine.

I had it cooked and on the table in 30 minutes. No kidding. It was delectable. We don’t often buy sea scallops, because they’re so stinkin’ expensive, but they were perfect for a special meal.

For dessert, I made him Martha Stewart’s NY Style Cheesecake {sorry, no photo}.

It was super-simple to make, but if you’re going to make it, you should do so a day in advance because it takes at least 6 hours of chill time in the fridge. It too was delectable. And I’m not really a huge cheesecake fan.

So there you have it! A simple delicious meal for your honey-buns on Valentine’s Day!

So, I see you’ve got a thing for Ina…. ;) Sounds like it was a fantastic meal! And I totally agree about the wine comment.
